We appeal again to your generosity and solidarity!

 

R&D thanks all the colleagues who participated in the first solidarity sale of Parmesan!

Thanks to your donations, 5 artisanal and organic farms from Amatrice have received fodder (healthy feed for farm animals)

Two years after the terrible earthquake, Amatrice and the other villages are still lying in ruins … The inhabitants feel abandoned…

On 24 August 2018 it will be two years since Amatrice was hit by the terrible earthquake leaving behind indelible traces in the hearts of survivors and 4,000 tons of ruins in this medieval town. Only less than 15% of the rubble has been cleared.

The inhabitants feel abandoned but remain standing, endowed with strength and courage to rebuild their city and revive their land. Most of them still live in hotels tens of kilometers away from their city while waiting for the delivery of prefabricated homes.

Two years ago, Amatrice was a popular tourist destination for its landscape and local products. Its economy was flourishing. Today, Amatrice has become a tourist and economic desert!

 

The shepherds on the watch protect their sheep flocks …

Despite these extreme conditions, the shepherds, artisanal and organic producers of Pecorino (sheep’s milk cheese) as well as of other cheeses, preferred to stay with their sheep flocks and continue to produce the “Amatriciano – Il Pecorino dei Monti della Laga PDO” by scrupulously following the ancestral tradition.

Unfortunately, small producers can no longer find buyers and the earthquake has destroyed their storage facilities. This is why they asked us to help them, to allow them to sell their cheeses and thus be able to continue production.

 

R&D organizes a

« Solidarity sale of Parmesan, Pecorino and others organic cheese of Amatrice »

For organizational and accounting reasons,

please place separate orders for each category of cheese

using the appropriate forms (see below).

Payments will also have to be separate.

All donations received from the sale of Parmesan will be transferred to the victims of Amatrice earthquakes

The sums raised by the sale of the other cheeses will be paid in full to the local producers.

R&D will not get any benefit whatsoever from this sale and the management of this action will be carried out only by R&D volunteers.

 

1. ORDER OF PARMIGIANO REGGIANO D.O.P (PARMESAN)

Punto Latte ( link ), a family-run company with a “short supply chain”, that is, using only the milk of its own production for the preparation of Parmesan, which has already received several international awards for the quality of its “Parmigiano Reggiano PDO”, including a silver medal for its 24-month parmesan cheese at the PDO cheese competitions in 2015, 2016 and 2017 (link), once again offers for sale its parmesan below the market price in order to help the inhabitants of Amatrice, or  €15 per kilo ( including your donation of €1,30) of parmesan. This is a proposal for a basic donation, if you wish, you can increase your contribution

For its part, R&D will add the same amount of €1,3  to obtain a basic donation of € 2,6  for each kilo of parmesan sold .

All donations received will be transferred to the victims of the earthquake of Amatrice

NB: Parmesan is produced without additives and with gluten and raw materials of the highest quality. It will be delivered in 1 kg vacuum packages and can be kept in the fridge for up to 8 months.

2. ORDERING “AMATRICIANO – IL PECORINO DEI MONTI DELLA LAGA PDO” BIO ( linK )

Pecorino cheese is made by shepherds according to an ancestral tradition. The latter take their herds of sheep grazing in the semi-uncultivated fields of “Monti della Laga” (see) at 600m of attitude. This cheese is identified as a product from the mountains. Its dough is semi hard. It is friable and with solubility that pampers the palate, light but intense, decisive but sweet, persistent but elegant.

It has received several prizes, including the first prize of the European session of raw milk cheese competition as well as the first prize of the contest “Premio Roma 2017”. It is a cheese from organic farming.

With the agreement of the “Consorzio di tutela Amatriciano, il pecorino dei monti della Laga” which brings together the shepherds, artisanal and organic producers of Pecorino, the shepherds sell pieces of about 1kg at the price of € 20 (shipping costs included)

3. ORDERING STRACCHINO STAGIONATO BIO

Stracchino Stagionato is a white soft cow’s milk organic cheese with an amber crust. Its taste is persistent leaving a pleasantly bitter aftertaste.

It is made with raw milk produced on the farm, without preservatives and with a flowered crust. It is excellent to consume fresh, but it can also be slightly melted and served with vegetables.

The cheese comes from the “Azienda Agricola Biologica Casale Nibbi” – see  site

The shepherds sell pieces of about 400g at a price of  €10 (refrigerated shipping costs included).

Ingredients: organic cow’s milk, lactic ferments, natural rennet and salt.

4. ORDERING Caciotta BIO

Caciotta is a soft and sweet cheese. It can be used as a soft cheese. It has a maturation of 10/20 days.

It can be served as an aperitif or as a side dish.

After the earthquake, this cheese was sold in solidarity with the inhabitants of Amatrice

Scamorza is a hard cheese made from cow’s milk, typical of the region of Amatrice. It can be enjoyed as it is but its taste is better appreciated when cooked because thermal processing increases its flavour.

Ingredients: cow’s milk, rennet, lactic ferments, salt.

6. ORDERING Caciocavallo BIO

Caciocavallo is a tasty cheese typical of mountainous areas. Its refining technique consists of hanging two gourd shaped balls of cheese to a wooden pole as if placed on a horse’s back.

It has a unique taste: milky, just a little salty, aromatic, pleasant and melts in the mouth.

It is particularly suitable for young children, elderly people and athletes. It is usually eaten alone for its very refined taste, or can be accompanied by red wine or sparkling dessert white wine.

Ingredients: fat cow’s milk, enriched with lamb and goat rennet, salt and possibly lactic ferments.
